My Secret Recipe
Today I'm sharing my cobbler recipe which I keep on a post-it note on the inside of my spice cabinet. I made it the other night with strawberries and my brother in law said "this is better than most desserts!" And it's very easy! :)
PREP:
pre-heat oven to 350Â
1 stick salted BUTTER- melt in 8x8' pan in the oven while it's preheating. I think my pan is 7x10- close enough.
FRUIT:
Dice fruit of your choice- around 2.5- 3 cups chopped. Add about 1/3 cup sugar and let the fruit soak in the sugar while you prepare the batter. I love to use strawberries (1 pound) or peached (3 large). Blackberries are also perfect.
BATTER:
1 cup flour
1 Tablesppon Baking Power
1/2 teaspoon salt (I use kosher salt so I use a bit more than this)
1/2 cup sugar
2/3 cup milk
Mix these ingredient with a spoon until smooth
Place dollops of the batter evenly in the pan of melted butter. (see photo below) Do not mix. Just keep spooning it all it so that the butter is evenly distributed throughout the batter. (see image 1 below)
Spoon the chunks of fruit on top of the batter. Don't add the juice or extra sugar that might be at the bottom of the bowl. Just the fruit. (image 2 below)
Cook for about 35 minutes. You want it to be crispy and browned. Not light- let it get to a deep golden brown. (see last image below)
Serve with vanilla ice cream! Enjoy with friends and family.Â
